Phnom Penh (FN), June 6 – Cambodian Prime Minister Hun Sen recommended all the state institutions, particularly protocol teams nationwide, to serve Khmer traditional food for visiting foreign delegations.

“Public institutions shall not serve foreign cuisines for our visiting guests. How could they know our identity,” the premier addressed at the Puthisastra graduation ceremony on Thursday.

Prime Minister recommended such authentic local food as Samlar Kokor, stirring soup – a variety of nutritious mixed vegetables served with catfish or pork; and Samlar Machu, sour soup – a mixture of lime, tamarind, tomato, and pineapple, served with chicken, pork, or fish.

Prime Minister also recommended Khmer noodle, Num Banh Chok Samlar Khmer – a rice vermicelli noodle served with soup made of fermented fish topped with crisp raw vegetables including cucumbers, banana blossom, and water lily stems and fresh herbs, such as basil and mint.
